Long time Scottsbluff, Nebraska resident, Minetta Esther Coover, 94, died Friday, March 22, 2024, at Garden Plaza of Aurora in Aurora, Colorado. A funeral service will be held at 10:00 a.m., Saturday, April 6, 2024, at First Presbyterian Church in Scottsbluff with Pastor Jeff Fiet officiating. Burial will follow at Fairview Cemetery in Scottsbluff. Memorials may be made to the First Presbyterian Church. Minetta was born on March 16, 1930, to Richard and Henrietta (Nuss) Griess in Clay County, Nebraska. Minetta grew up on a farm with seven brothers and sisters, and attended Stockham High School. She moved to Scottsbluff following high school and began working at Gering National Bank.
Minetta was united in marriage to Robert Lee Coover on June 6, 1959, in Scottsbluff. They became the parents of three children: Mark, Jon, and Brian. While raising her family, she attended Nebraska Western College, and Chadron State College extension courses to become a teacher. Minetta was very passionate about education, and worked for many years as a substitute teacher in Scottsbluff Public schools. She was an active member of First Presbyterian Church of Scottsbluff.
Minetta’s early interests included drawing/sketching, piano, baking, and canning. She later enjoyed trips to Arizona with friends, playing cards, and socializing in general.
Survivors include sons, Mark (Sharron) Coover of Bennett, Colorado, Jon (Chris) Coover of Larkspur Colorado, and Brian (Joy) Coover of Golden, Colorado; grandchildren, Matthew, Kelly, Ariana, Isaac, Mikenna, Brynna, and Josh; great-grandchild, Johah; along with many nieces, nephews, extended family and friends.
Minetta was preceded in death by her husband of sixty-three years, Robert Coover; her parents, Richard and Henrietta; her brothers, Harold, Wilbert, John and Gerard; and sisters, Lenora, Eunice, and Margarete.
